Recipes.....PLEASE!

I am in need of some new recipes these days. I have been trying to cook at least 4 days a week and I'm running out of good EASY recipes. I have realized since moving to Tulsa and working farther away from my home by the time I get home (around 5 or after) I don't feel like cooking and don't want to cook something that is going to take hours. So I'm in desperate need of some new recipes. Please, please, please send me your recipes....post them in a comment, or post them on your own blog. Please!

To get you motivated I will post one of my favorite EASY recipes. 

Crispy Parmesan Chicken

1 cup crushed saltine crackers (24 crackers)
1/4 cup plus 2 Tablespoons grated parmesan cheese
1 Tablespoon dried parsley flakes
1/2 tsp. salt
1/8 tsp. pepper
dash of garlic powder
4-6 boneless, skinless chicken breasts (I usually only do 2 chicken breasts)
1 stick butter, melted

Combine crackers, parmesan cheese, parsley, salt, pepper, and garlic powder in a large ziploc bag. Dip chicken in melted butter and dredge in cracker mixture. Place in a flat baking dish. Drizzle with remaining butter and extra cracker mixture. Bake uncovered at 350 degrees for 45 minutes.

This dish is so easy to make and is a quick clean up...its a great week night dish!

She has great recipes on the cooking section of her website. Alot of butter but you can always reduce that!

I have one! This is a REALLY easy, REALLY good enchilada recipe that my mom makes:

1 box of frozen taquitos: (I think the best kind are the ElMonterey brand "Cruncheros" but other brands will work too) They're usually in the frozen appetizer section and come in chicken or beef.
1 can Green Chili Sauce
1 can Cream of Chicken
Shredded cheese

Just spray a casserole dish w/ PAM and place in the taquitos neatly(however many will fit). Then mix the Green Chili Sauce and Cream of Chicken together in a bowl and pour evenly on the top. Then sprinkle on a layer of shredded cheese to taste & pop in the oven on 350 for about 20 mins (or until the cheese is bubbling).

It's really good with salad and maybe some chips & salsa :)

I think I might try the Parmesan Chicken, sounds delish!

Hey!

I'm in the same boat. Here are some recipes I lean on.
1. Ultimate Nachos (topped with black beans, guac, sour cream, tomatoes, etc)
2. Poppy Seed Chicken
3. Honey Rosemary Chicken
1/4 cup honey
1 tbsp dried rosemary
6 skinless chicken breasts
1/4 cup balsamic vinegar (I use balsamic vinaigrette and lessen the oil)
2 tbsp olive oil

Mix all ingredients and then put in resealable bag with chicken. Bake at 350 deg. in 9x13 for about an hr, or until chicken's done (goes by quicker if you chop to smaller pieces). Salt/pepper to taste. Goes well with steamed potatoes and salad.

Hey Catie! It's Savannah. I just stumbled across your blog the other day. I can totally sympathize with your feelings. I'm student teaching this semester and have figured out a few nice ways to prevent cooking once I come home from my long day with kiddos. I try and make a lot of stuff in my crock pot, don't know if you have one, but it's so nice to just come home and dinner is ready! My crock pot clicks over to warm once a recipe is cooked, which is nice so that it doesn't keep cooking something.

Here are a few recipes:
Super Easy Chicken
2-4 frozen chicken breasts
1 pkg. Italian dressing mix
1 cup warm water or chicken stock
Place chicken in crock pot, sprinkle with dressing mix, pour water or chicken stock over chicken. Cover and cook on low 7-8hours.
**You can also cook brisket or roast in a crock pot, for a roast I just pour a can of french onion soup over the roast and turn the crock pot on!

This one is not crock pot, but similar to your parmesan chicken and super easy.

Italian Chicken
4 boneless chicken breasts
1/2 C. grated parmesan (I just use the bottled kind)
2 tsp. dried oregano
1 tsp. minced parsley (I usually omit this)
1/2 tsp. garlic salt
1/4 tsp. pepper
3 Tbsp. of melted butter

Combine parmesan, oregano, parsley, and garlic salt in shallow dish. Dip chicken in butter, then coat with parmesan mixture. Place in a greased baking dish, drizzle with any remaining butter and bake uncovered at 425 for 15-20 minutes or until chicken juices run clear. Serves 4 (I do half recipe for Jon and I.)

Also you could do soups in a crock pot, I love taco soup.
Not sure how much of vegetable people you guys are, but an easy way to do squash or zucchini (or any other veggie really) is to throw it in a skillet (chopped of course!) drizzle with olive oil and then I sprinkle some Emeril seasoning (not sure which kind..just a general one that said it's good on anything) on them and cook 'em for about 5 mins!
Ok sorry, I love to cook, I hope I didn't overwhelm you with ideas. It's been fun hearing what you're up to lately! I'll have to get some first year teaching tips from you sometime soon.
